I’m fine, and wanted to spoil the boys in my home a bit this evening with a traditional Norwegian homemade “Spice-cake” 🍞. The basic and traditional recipe is not so spicy, just very tasty, but the boys wanted a tiny “touch” of chilli in the cake so then I did have a “touch” of chilli in the cake as well, – and to be honest it was not so spicy and bad at all, just ac6 a bit better and with a bit more taste then the original recipe 🌶😊.
And,- today,- well after I was finish at my ordinary job at 18.00 this evening it’s in away Easter holiday for me. Not totally, because I’m going to work the next days at “the health and social care online job”,- but it’s 4 and 3 hours per shift now 😊. A bit less hours now, then it was when I did started some months ago,- but still very value workinghours for me 🥰. And I’m so grateful for every hour I’m working 🧡.
What I actually wanted to say is that the Easter holiday in Norway starts tomorrow, on Thursday. Norway is one of the few countries in Europe that have the Thursday in the Easter as a Holyday 🌻. So I have holiday in my main job from tomorrow and actually until Monday 😊. I’m still going be working in my other job, and I’m going to start cleaning my home 🏡. And a couple of other things too,- of course in my home 😊 ….. I don’t have any other choices then spending my holiday in my home at the moment 😊.
But,- Do you want to try my homemade Norwegian Spice-cake? It’s not very difficult to make and bake, – and it’s taste both like Christmas and Spring 🌶. I did bake it now and then for Christmas when we was living in Norway,- and I have made it a couple of times after we did move to Spain as well, to my daughter when she did live together with me 😊. My daughter really like this cake 😊 ,- and obviously the boys too 😊.
Norwegian homemade Spice- cake,- the basic and traditional recipe:
125 gr. butter, 300 gr. sugar – this is stirred until it becomes more or less a white color. Then stir 1 egg in the mix.
300 gr. wheat flour, 1/2 teaspoon ginger spice, 1/2 teaspoon cinnamon spice, 1/2 teaspoon clove spice, 1/2 teaspoon baking powder (and if you want some chili 1/2 tsp chili spice) 1 cup milk, 2 teaspoon lemon juice.
Blend the dry seed, then milk, lemon juice and butter / sugar / egg mixture. Have the cake batter in a loaf form that is greased with butter. Bake the cake at the bottom of the oven at 170 degrees for approx. 45 min.
So easy, so fast and so tasty 😊. And then you have something tasty for your coffee or tea, or just to serve your guests one day when we are allowed to have guests in our home again 😊. We are still in quarantine and curfew here in Spain,- but one day we will be “free” again. It’s just to try to be as patient as possible 😊. In the meantime you can bake a homemade, traditional and Norwegian Spicy- cake, from my basic recipe, with a tiny “touch” of chilli 🌶.
The cake is also very suitable for freezing. You can cut it into slices before you freeze it, so you can easily just take out a piece of cake or three.
