A sweet taste of Norwegian late summer 🌞, and I did not share with anyone 😅

Hi ❣ It’s so nice to see you,- like always 😊 I hope all is fine with you all 🧡

I remember when I was a child my mam, and my grandmother too, made a delicious dessert made from currants. I did try to make it myself to my children too, but for some reason they didn’t like this dessert as much as I did, and still does,- so I haven’t made it very much.

An other thing,- there’s not so much currants here in the area, at least I haven’t found to much, and the ones I have found has been a bit expensive.

But my mammi did send me a photo one day when she was making this dessert, and I did decided that I wanted to try to make one too 😊.

My plan was actually to make the dessert to “my fling”. I had promise homemade mushroom soup, and thought I could “top it all” with this delicious homemade dessert then 😅.

Like I mention, – the dessert is made from currants,- its fresh and sweet at the same time, and I really like it a lot. It’s not even difficult to make, or “expensive”,- except from the a bit expensive currants here in South of Spain 🍒.

The dessert is called “Trollkrem” in Norwegian,- and if I try to translate it into English it will be maybe “Troll cream”? Maybe the trolls in Norway did love this dessert too, or maybe you became a bit like a troll after eating it? 😅

Well,- I did feel a tiny bit like a troll after making it,- but okay,- maybe I’m allowed to be a tiny little troll now and then? 😊

The recipe for the Norwegian dessert, – Troll cream (for two persons):

1 large cup of currants (cleaned).  1 slightly smaller cup of sugar.  1 egg yolk.

Whisk everything together to a stiff cream / mousse.  Can be cooled slightly in the refrigerator if you wish.  Can also be served with cold custard.

And if the cream does not become stiff and like a mousse it may be because the currants are too ripe.  Then you can try whisking in another egg yolk into the cream.

How big the cup should be? I did use a normal tea cup 🍵.

Anyway,- the dessert is served. A tasty, fresh and sweet dessert that tast like late Norwegian summer 🌞.

I did mention that I became like a tiny little troll after making this Trollkrem,- and that’s because I didn’t share it with anyone 😅. I did eat up all by myself. I didn’t served any dessert to the mushroom soup 😅. And I enjoyed every tiny little spoon with no regrets totally alone 😊. Snd I didn’t tell anyone either that I had made “Trollkrem”,- I just kept it all for myself 😊. So it didn’t became any homemade dessert after the homemade mushroom soup 😅. I didn’t “top it all”, instead I did eat it all 😊.

But maybe I try to make a new one another day, and even share with someone? 😊

Norwegian homemade dessert with a fresh taste of late Norwegian summer 🌞

Empties my fridge and makes paprika “steak”, and a bacon mix with mango too 🌶 🥭🍔

Hi ❣ It’s so nice to see you,- like always 😊 I hope all is fine with you during this time we all are going through 🧡

It’s a bit time since I have shared any food recipes with you. The reason is very simple,- it’s just me around in the house at the moment and my fridge and freezer are not very big so there’s not very much space to make and bake a lots of cakes, food and dinners for storage there over a period. And at the moment I’m also trying to empty both my fridge and freezer for food as well instead of fill it up 😊.

The reason why I’m trying to empty my fridge and freezer is to actually save money, eat “up” the food I have before I buy something new, and also because I know when my son in the middle and his friend are moving in they are going to bring their food with them as well as my daughter is going to do the same when she is moving in too. Then it’s necessary to have space and place for their food,- and it’s easier to organize the fridge and freezer for all of us too when it is as empty as possible 😊.

Like I mention I’m also empty my fridge and freezer for saving money. Sounds strange?

It’s not actually, because in general we have the food we like to eat in our fridge and freezer, and we even buy some more before “all” is empty, and then throw away the “old” food. We are in general very lucky. And I don’t like to throw away food. It’s also a couple of reasons for that. It’s again, for saving money, we eat up before we buy something new, as well as my thoughts goes to the ones that haven’t the same possibility for buying food as I have.

Sounds maybe strange,- but I don’t like to throw away edible food and knowing that other people don’t even have money to buy the food they want or need. And I can’t just give the food away either because I’m not sure where to find this people who haven’t to much to eat. If I had knew where to find them I had probably went there and delivered food. What I do instead is eat up what I have, as well as when I’m in the food store we have the possibility to buy some extra food and put it into boxes and give this to the people who haven’t to much. So then I do that at least.

I remember when I was a kid and didn’t want to eat up my food, either because I was saturated or because I didn’t like the taste, my parents reminded me of all those who didn’t have food.  I got a little tired of hearing about it, special because I was happy to give away my food that I couldn’t bear to eat.  I told my dad that it was perfectly fine for me to send my food in the mail to those who had no food.  But it was a little difficult to do that, for natural reasons that I didn’t understand as a child at that time 😊. Like for example my food, on my plate would be damaging during a mail- sending.

So I have this “we eat up our food” from my childhood too, and to be honest I have also tried my best to teach my children to “use the food they have” instead of buying something new and throw away edible food.

It’s a lots of tasty and good food you can make from “leftovers” like for example different kinds of omelettes, or just be a bit creative and use different recipes and put together something tasty and “new” in that way.

One day I did made myself some “paprika steak” for dinner, or that’s not actually totally correct 😊. I did use a Norwegian recipe for making something called “Paprika Steak”, but to be honest in my “steak” there was no paprika at all this time 😅🌶. I will share the original recipe with you 😊

Paprika steak: (to 4 pers.) 🌶🍔

What you need is: 400 g minced meat, 1/2 red paprika , 1/2 green green paprika, 1 egg, 1 / 2-1 teaspoon salt, 1/2 teaspoon thyme, 1 box crushed tomatoes, 1 seasoning cayenne pepper, 1-2 tbsp.  squeezed lemon juice

1) Cut the bell pepper/ paprika into small pieces 2) Mix the meat dough with eggs, bell pepper, salt and thyme.  3) Shape 8 pieces (about 1 cm thick) steaks.  Put them in a refractory form 4) Mix tomatoes, lemon juice and cayenne pepper, and pour over the steaks.  Fry in oven at about 225 degrees, the steaks are turned after about 25 minutes, the total cooking time about 50 minutes.

Serve with rice or pasta and salad, or baguette with the butter if you wish.

I didn’t had any paprika when I made this, but I had some advocate and onion I used instead when I made my “paprika steak”. The thing with this recipe is that you can mix in different varieties of vegetables instead of throw them away. The dinner still gets tasty, but just with various tastes 😊. And I didn’t use any pasta or rice either, I took the “paprika steak ” on a slice of bread instead this time 😊. And also put on some pickled cucumber and beet on top.

An other day I made a mix of bacon, tomato and mango, and I was very surprised over how good this different tastes was together, special fried mango 🥭. I have fried mango a couple of times after this, it’s tast so good 😊.

I had leftovers of a pepper sauce that needed to be eaten, as well as some potato salad, bacon, tomatoes and mangoes that should also be eaten soon.  I cut tomatoes and mangoes into chunks, then bacon.  I fried bacon until it got a little crispy, and had the tomatoes and mangoes together with the bacon.  Leave everything to roast together for a few minutes.  I heated up the rest of the pepper sauce and had potato salad next to it. And “vola”,- a tasty leftover dinner and no waist of any food 😊.

So it’s “just” to try be a bit creative and you can make and get different kinds of food, and dinners from leftovers instead of throw the food away. Its tasty too, and easy to make 😊.

Creamy, homemade cauliflower soup with advocate as lunch, dinner or something to eat in the evening 🥑🥦🥣

Hi ❣ It’s so nice to see you,- like always 😊 I hope all is fine with you during this time we all are going through,- together 🧡

Suddenly I’m on my own after living together with my oldest son and a friend of him for 3 months. It feels good to be alone, but also a tiny bit empty. Maybe it’s empty because all their bags and boxes are moved away? 😊 And maybe it’s empty because I have started moving my different things and stuff back into where they normally are, and suddenly got a bit more space and room “here and there” ? 😊

I have been re- organize my home back “to normal” the last days, and I feel closely like its echo in my home 😅. Suddenly the rooms was a bit bigger then just a week ago 😊.

But yes,- it’s empty in my home, I do miss both my son and his dog,- even his friend a bit 😊. I like to have my children around me,- but I prefer not to live together with them to long. Its best for both them and me to start living on our own, start our own lifes 😊. At the same time I’m very grateful for this weeks together with my oldest son,- and Im feeling lucky that also will get the opportunity to live together with my two youngest children for a while, during this summer 😊.

When I have been trying to get my home “back in business” again in between my work, I also need to eat,- and I really like cauliflower soup. It’s so easy to make, it’s very tasty and I can also cook so much that I can freeze the soup in portions so I have soup for lunch or dinner, or even something for the evening, for several days. I can’t eat cauliflower soup all day long,- but one meal during a day or every second day it’s not a problem,- it’s a good and tasty meal, that’s also fills my stomach and makes me feel full.

I have also planned to do some extra work with some extra online job during the next weeks. So easy and prepared food is good to have 😊 . Hopefully I will manage to earn “in a bit” what I have lost of my regular income during this corona- crisis and period. And maybe and hopefully try to study a bit Spanish as well. Somethings are easier to do when it’s just me around in the house 😊. And then its good to have some easy going food that is both tasty and fills up my stomach 😊. I hope I will manage my extra working plan the way I have planned,- but as most of us have experienced, many times things are not going as planned. And things can change very fast.

I have very good experience in that plans and things do not go as planned. Actually many years of experience with it, at the same time I know that for many people this became a whole new experience in life, that things do not always go as planned.  Many have now had to learn through the time we live in – that things do not always go as planned. A new and probably, challenged and difficult experience for many.

But the was actually not the point in my text today,- I’m writing myself away here 😊. I was actually going to share my recipe for my homemade, Norwegian cauliflower soup with you 😊. This soup is very easy to make and tasty as well. And like I mention, the soup can be use as a lunch or dinner, or even as a meal for the afternoon 😊.

Norwegian homemade and creamy cauliflower soup 🥣 (for 4 person)

1 cauliflower, 1/2 finely chopped onion, 8 dl.  water, 2 pcs.  broth cubes, 2 dl.  milk or cream.

Clean the cauliflower, divide it.  Put cauliflower, onion, water, broth cubes and milk / cream in a saucepan / saucepan.  Bring to a boil and cook until the vegetables are tender.  Flavor slowly and pepper.

It can’t be easier to make a tasty and delicious homemade soup 🥣.

This time I did double the recipe, and also used one broccoli as well. When the soup was finished I had some advocate in it too this time 😊.

The rest of the soup I have put in my freezer is without advocate, just plane soup. Something that’s give me the opportunity to use bacon or asparagus if I want, or maybe even some potatoes just to make it more “filling”. A tiny bit variation is possible even with the same soup 😊.

I normally serve bread or baguette, and butter together with the soup too 😊.

You can use both regular onions or red onions, spring onions or leeks.  The choice is yours.  I vary, and sometimes I mix a little of each of the different onions as well.

Norwegian homemade cauliflower soup topped with advocate 🥑😊

I made my own cake recipe for my son’s 26th birthday cake 💙🎂

Hi ❣ It’s so nice to see you,- like always 😊 I hope all is fine with you during this days, weeks and months we all are going through,- together 🧡

Today my oldest son is 26 years old 💙. It’s 26 year since I became a mammi for the first time in my life 🥰. And to every birthday for all of my 3 children I’m making a chocolate cake with a tasty “coffee- cream” in 🍪. It’s one if their favourite cake 😊.

This year, to my oldest son’s birthday it will be, unfortunately, a tiny little change with the chocolate- cake 🙄. Not because I really want to try something new, but because I didn’t manage to get all the ingredients for the “normal” chocolate cake.

If we haven’t been living in quarantine and with curfew I have probably manage to get all the ingredients, because then I could just try an other store, and an other store until I have got all the correct ingredients. I can’t do that know.

I can’t shop “necessary” food for a living in 4 different food stores. And at the moment I’m not allowed to “run” from store to store for finding the correct ingredients, and just buy the ingredients for the cake,- because they are not “life- necessary” or “necessary” food. It’s also a tiny limit for how much food I need and can buy, as well as actually also be able to save for a longer time. I don’t have unlimited with storage for food, and my son and his friend also have some storage place in my kitchen for their food.

I did try two different food stores, both was empty for the different ingredients I needed to have in the “coffee- cream”,- so then I needed to be a bit creative 😊.

To say I did made my own cake recipe for my son’s birthday cake is a thrut with modification. I did use the “normal” chocolate cake recipe for the cake- base, and did find an other recipe for the cream to have in snd over the cake 😊.

How successful it was, we do not agree, – me and these two young men.  My son and his friend liked the cake and the cake base mix, and the cream of the cake was good and tasty together.  For me it became a little too “powerful”, a little too much. But I’m not the biggest cake- eater in the world either, so I know I can be a bit critical when it comes to cakes 😊.

Do you want to try this “new” mix for our, me and my children’s, traditional birthday cake? I’m not sure what name I should give this cake, so I just call it chocolate cake with butter and vanilla cream. Because that what’s it actually is 🎂.

Homemade Chocolate cake with butter- and vanilla cream 🎂

The cake base:

4 egg whites and 250 grams of sugar are whisked together to the eggnog.

180 g wheat flour, 3 tablespoons cocoa, 2 teaspoons vanilla sugar, 2 teaspoons baking powder.  Mix it all in with the eggnog.

1 1/2 dl water or milk, and 150 g butter, melt together, then mix into the cake batter.

Lubricate a cake mold with butter.  Pour the cake batter into the mold.  Bake the cake at the bottom of the oven at 180 degrees for about 30-45 minutes.

The butter- and vanilla cream:

4 egg yolks, 1 cup cream, 175 grams sugar, 2 teaspoons vanilla sugar, about 150 grams margarine.

Egg yolks, cream and sugar are cooked to a thick cream.  Must be stirred all the time, – elkers burn the cream firmly to the bottom of the pot.  Vanilla sugar is stirred after the pot has been taken off the hob.  Allow the cream to cool slightly before stirring in the butter.  (I also had 1 tablespoon cocoa in the batter).

Divide the cake base in half, spread the cream over one part of the cake base.  Lay the second portion over Spread the rest of the cream on top of the cake.  Feel free to decorate the cake if you wish.

I didn’t even had or find different kinds and types of cake decorations on my food shopping trip,- but lucky for I did had birthday candles in my home, and a bit other chocolate. So I did try to decorate my son’s birthday cake as best as possible with some other chocolate I had in my home 🍫.

I think I’m going to make a new one to him an other day, the “traditional” one, and “stach” it up a bit better with some tiny bit nicer cake decorations. But I think that needs to be in a couple of weeks, or maybe even a month 😊. Hopefully I will manage to find the ingredients and also a bit more cake decorations in the food store at that time 😊.

We do like different things, also cakes 🎂. Maybe you will enjoy this cake a bit better then I did 😊? Any way, – the most important thing was actually that “the birthday- boy” did enjoy the cake,- and he really did 💙.

Homemade Chocolate cake with butter and vanilla cream, “touched” up with some cacao,- to my oldest son 🎂

It’s not always easy to find all the ingredients I need to bake a cake, or make some food now at days 😊. Special when I can’t “run” from store to store 😊. So today my oldest son got a new “touch” on our homemade, Norwegian and traditional birthday cake,- our favourite chocolate- cake 🎂. To be honest,- this was not one of my favourite cake 😅. Princess cake for my princes – then it will be a Prince cake 💙🍩

Hi ❣ It’s so nice to see you,- like always 😊 I hope all is fine with you during this days, weeks and months we all are going through,- together 🧡

This Sunday I did bake and make a cake with the name Princess- cake,- but since it was to the young men in my home, and my son in the middle and his friend too,- I think the name Prince- cake probably is better 😊. So I did actually made two cakes. One for the young men here in my home, and for for my son in the middle and his friend- in their home 😊.

I haven’t made or baked this cake since I was living in Norway, so it’s some years ago 😊. But I still manage to get it the way I did remember it’s looked like, and taste like 🍩.

The cake is yeast baking with vanilla cream.  I like it very much, and obviously the boys here in the house liked it too 😊.

Of course,- like most of the cakes I bake, this is easy to make and bake too, and sweet and tasty as well 🎂. It is the raising of the yeast dough that only takes some time. Special if the cake should be a bit “airy” too 😁.

Do you want to try to make and bake a homemade Princess- cake with a traditional Norwegian recipe? Here it comes, in case you want 😊

Princess- cake:

300 g wheat flour, 2 tablespoons sugar, 1 teaspoon vanilla sugar, 100 g melted margarine, 50 gr yeast, or 1 hp dry yeast (I use mostly dry yeast all the time), 2 dl milk.  Raisins and sugar, vanilla cream (and chocolate sprinkles).

Mix together a regular yeast dough, making sure that temp.  the butter and milk are lukewarm so you don’t “kill” the yeast.  Then there will be no big and airy cake.

Put the dough to rise in a warm / slightly warm place, with a towel over, for about 30-60 minutes.

After raising, divide dough two, roll out flat rectangle.  Spread vanilla cream over the rack, sprinkle with raisins, sugar and chocolate sprinkles.  You do this on both rectangles.  Then roll the rectangles together as a sausage, and divide into pieces that are about 5 cm long.

Cover a cake mold, which is approx.  30/40 * 30/40 cm, with baking paper.  Place the rollers together, tightly in tight, with one opening of the rollers up, and the other opening down in the baking mold.  Then set the cake to rise again for about 30 minutes.

When the cake dough has risen, brush it with whipped egg and sprinkle with either brown sugar or pearl sugar.  Bake the cake at the bottom of the oven at 200 degrees for about 45 minutes.  Until it has a nice golden color.

The cake fits nicely to split and freeze something for a later occasion.  I made double cake dough on Sunday since I made two cakes.  Two cakes distributed to 4 young men – that’s not too bad 😊.  I tasted a tiny bit myself too – and the cake was tasty, airy and good – and well worth trying 🎂. The “princes” in my home enjoyed the cake,- and I think my son in the middle and his friend will enjoy it to. I will ask him later 😊. And also tell you how I did manage to give him a homemade cake, when we are not living together, and don’t are allowed to meet up 😊. But that will be in my next post/ text 😊.

I think the young men in my home maybe will miss my baking and the cakes a bit when (or if 😅) they are moving out. I hope so,- to both, – moving out and miss my cakes,- because that means my cakes was good and tasty, and worth missing 😊. But they don’t need to move back into my home to taste and eat the cakes, they can just visit me now and then instead,- and I will be visiting them as well 😊. Of course, – when they have moved out 😅.
