Hi ❣ It’s so nice to see you,- like always 😊. I hope all is fine with you all 🧡

Normally I have been sharing homemade baking or cooking from Norwegian classic and traditional recipes with you during the weekends,- except from last weekend,- and I’m not going to share anything this weekend either 😊. It’s not because I don’t want to make or bake or share,- but I think it’s better to save the different ingredients I have to “just in case- days” at the moment ,- and wait a bit with cozy baking and cooking 😊. Of course, if I’m make or bake something worth sharing I will share it with you 😊.

Spain is now in quarantine. It’s a very, very strange feeling. We are only allowed to go to the food- store, farmacia, hospital, gas- station and, if we can’t do our work from our home, we can go to our jobs, and short walk with the dogs, so the dog can go to the toilet. We have been home today, closely all day. Both the boys and me has been working online, and they have also helped me a bit with cleaning the home with disinfectant on door handles, light switches and other things. And I also did help my son in the middle a bit early this morning.

This is standing in my hall at the moment. The alcohol is mixed with water in the little bottle for use on door handles, light switches and hands after being outside, – even with use of gloves.

We have also listen and watching the news this afternoon. And,- well, we are not in shock,- but still all is very, very strange and surreal. It’s like living in a movie,- and that all this is not real. But it’s so very, very real. And we are in quarantine and live our life that way from now.

Serious news this afternoon.

Well,- it was actually a tiny little bit about food I was going to write about 😊. I was a bit carried away,- something that’s not very strange in this days.

I’m so lucky that I have several aloe vera plants in my patio, and aloe vera is good to have for different reasons and for different things. It’s good to use if you are sunburned and it’s good to use for the teeth. I have it for my teeth at the moment. I still have a lots of tooth paste, but in case I get empty, I can use aloe vera to brush my teeth with 🧹. And I actually use it at the moment as a kind of protection for any infection and something like that for my teeth.

The plant is also good for the skin, circulation, digestive system, liver, bone structure and respiratory system.  So these days I am even more fond of my aleo vera plants than ever.  In its own way it is a small “medicine cabinet” 🥰. And I use it every day as well, – not just for my teeth, but also drink the water in the glass from my aleo vera plant that’s stands in my bathroom 🍃.

Except from my lovely aloe vera plants I also have three other things in my household/ food- hold that’s for me are important to have during this days we are in. And, except from water- that’s the fourth 😊,- but the three other are honey, tea- bags and oatmeal.

I have mint tea for a variety of reasons.  First, the tea works antibacterial when mixed with honey (or sugar), it prevents and reduces respiratory tract pains, helps against mouth ulcers, is good for digestion and prevents dehydration.  I have bought mint tea for all these reasons, but most of all for dehydration.  If I run out of bottled water, I can boil water from the tap and use some mint tea to give it a little better taste on the water.  Tap water here contains a lot of calcium and does not taste so good either.  But tap water is better than no water after all.

There are several different types of honey, which also works a little differently so I only write a little general information about honey.  Honey is a natural medicine and acts as a healing wound.  There are antioxidants, vitamins and minerals in honey, and honey has an antiseptic function.  Honey seems relaxing and provides better sleep – and it may look like we may need some relaxation and better sleep these days.  In addition, honey gives a good taste on both bread slice, dinner and oatmeal.  And, – I usually eat about 10 blueberries every day, but now I can’t get blueberries anywhere, and then honey is a good substitute – at least for me.

And finally, the valuable oatmeal.  Oatmeal contains much of what the body needs from vitamins, minerals, healthy fatty acids, carbohydrates and vitamins.  I can use it in bread, make porridge or juice.  I remember when I had been through the births of my three children I always got red oatmeal soup.  And it tasted so amazing.  Fortunately, I got the recipe for this from my mom, and will make myself some soup one of these days.  I can also mix oatmeal with fruit and berries and have it in the yogurt.  So there are many different, varied and tasty ways to be saturated with oatmeal.

So in a crisis like this, like we are in this days,- my three most important ingredients in my kitchen are mint tea, honey and oatmeal 😊. But I have more various food than this. This is the food I really prefer to not be empty for, and of course, also prefer to have some extra of as well. And it’s not expensive either or take a lots of space 😊.

A tasty end on the weekend and a sweet start on a new month with a homemade ” wreath of leaves” 🥨

I hope you have had a great week, a good end on this week and a really nice start on this new month,- March 💚. I have had both,- a nice week, a good end on this week and a good start o this new month 💚.

I have been working a bit today as well. I have been so lucky that I was able to change my 5 late evening shifts on my online job to 3 not so late evening shifts in the week, and afternoon shifts in the weekends 🥰. I should not be able to do that before in April,- but lucky for me I actually got the possibility and opportunity anyway 😊. Snd my teamleder at my online-job had a tiny little meeting with me today as well, and told me that they were very happy with my work and also they way I did answer the clients 😊.

After changing my shifts a tiny bit I feel a bit more like I actually are going to have a bit more weekends and evenings this month to use to “me and my time”. It wasn’t very much time for that when I did start my shift at 20.00 or 21.00 and did work to 24.00 or 01.00. Now I can use more of my time to blogging and writing, or meeting friends, painting or watching a movie and knit a bit, maybeceven a date if I want, – and soon I can do my exercises too in between here 🥰. Because soon my private “exercise- room” in my home will be available again 😍.

It has been a nice week, and a very nice end on this week as well as a good start on March too, – so I decided to bake something we call “wreath of leaves” as a kind of “celebration” for good days, good week and a new and good month too 🥨. It’s a pastries that is very similar the the cinnamon spins I made a few weeks ago, but there are some tiny taste differences 😊. And “the boys” / young adults men here in my home has actually been a bit “on the run” too this weekend so I have had a tiny bit time for just me 🥰. So the “wreath of leaves” will also be a tiny little “thank you boys” for giving me a tiny bit time on my own in my home 🧡. I actually really presage that 😊.

My recipe for the “wreath of leaves” is, as normal, a Norwegian recipe, from the traditional Norwegian kitchen, well,- at least the traditional kitchen in Norway 30 years ago 😊. It is, of course, homemade with basic ingredients, and sweet and tasty too 🥨. It’s not very difficult to bake and make it, it’s just the the raising of the dough which takes some time.  The pastry should be raised twice so that it becomes slightly airy and light.

The recipe for a homemade traditional ” wreath of leaves” with a basic Norwegian recipe 🥨 ( for 2 “leaf garland”)

5 dl milk, 50 g yeast, 200 g melted butter, 1 teaspoon salt, 5 tablespoons sugar, 2 teaspoon vanilla sugar, 4 eggs, 1 teaspoon cardamom, about 18 dl wheat flour.

Mix all the dry ingredients together, heat up the milk to “body temperature” and mix the yeast into it together with the butter. Mix the egg together, and mix them together with the milk, yeast and butter. Nb- still keep the temperature if not the yeast will “die”. Mix it all together and put for “raising” for about 30 minutes. Cover the dough with a kitchen towel.

After the raising, Roll the dough into a long sausage of approx.  0.5 cm thick, and about 10 cm wide.

Fill in the leaf garland: butter, cinnamon, sugar, a little brown sugar and chopped chocolate.

Spread the butter over the dough, sprinkle with cinnamon, sugar, a little brown sugar and chopped chocolate.  Roll the sausage into a long sausage, then place the sausage seed as a ring.  Then, with a pair of scissors, cut equal parts (about 2 cm) and fold aside, every other time, the parts you have cut so that it becomes a wreath.

The “a wreath of leaves” puts on raising again for around 30 minute with a kitchen towel over. When it’s finish, brush the wreath with a room-tempered egg and sprinkle with some pearl sugar.  Fry in the middle of the oven at 250 degrees for about 10- 12 minutes, until the wreath has a nice, light and golden color.

And then you have a tasty and sweet a “wreath of leaves” to serve your guests or just to enjoy on your own 🥰. The ” wreath of leaves” is perfect to have in the freezer too, and just enjoy a bit now and then when you deserve something tasty and sweet 😊.

I did made two “wreath of leaves” today, or more correctly, this evening 😊. Ine to the young men in my home, and one I’m going to split in two parts and give one part to my son in the middle, and one part to my daughter tomorrow at work 🥨. I hope they will be happy, my oldest son was very happy 😊.

Homemade pizza with a Norwegian traditional and classic recipe is on the menu 🍕

I like to bake and I like to cook,- and at the moment I’m “working through” my own baking and cooking book,- made by me made for me, many years ago 😊.

My own homemade cooking- and baking book filled up with different Norwegian recipes from both my mammi and my grandmam 😊.

My recipes in my homemade cooking- and baking book are mostly basic, classic and traditional Norwegian recipes, and they are actually a couple of years old too 😊. I have the different recipes from my grandmam and my mam,- so they are used during some years, and are probably not so fancy and trendy as many other recipes there are possible to get from “all over the world” now at days 😊. I think the recipes I’m using are between 40 and 80 years old 😊,- but still possible to make and bake tasty homemade Norwegian food from 😊.

Today, this evening it’s homemade pizza on the menu, made from a very classic and basic Norwegian recipe 🍕. The boys, my oldest son and his friend, – or they are actually young men, deserve something tasty and homemade after helping me outside at the patio today 😊. So then it is homemade pizza on the menu 🍕.

By the way, – did you know that is was a housewife and mammi that “created” the pizza to her children, many, many years ago with lefts overs from her fridge? Or that pizza has different histories from different countries and cultures? Some kind of pizza has actually existed since year 700. So it’s a quiet “old fashion” food and recipe with different kinds and ways to use it 🍕. And today it’s the classic, basic and traditional Norwegian one I’m going to use 😊.

Homemade pizza with a classic and basic Norwegian recipe 🍕

Pizza dough: 4.5 dl wheat flour, 50 g yeast, 1 teaspoon salt, 1 1/2 tablespoon margarine, 1 1/2 dl lukewarm water or milk.

Dissolve the yeast in (about body temp.) water / milk, then add in salt and margarine.  Stir together and mix with flour.  Knead the dough well and allow it to rise with a towel over it for about 30 min.

Roll out the dough, approx.  a little under 1 cm thick, place it on a baking tray covered with baking paper.  Allow to rise for about 30 min.  with kitchen towel over

Pizza filled: 300 gr minced meat, 2 tablespoons wheat flour, 1 cup milk, 1 teaspoon salt, 1/2 teaspoon pepper, 1 onion chopped into pieces.  4 tablespoons tomato puree. Mix everything in a frying pan and fry golden and brown.

When the pizza filling is ready, it is cooled.  Then cover the flat pizza dough with the stuffing, sprinkle the oregano over, and finally grate the cheese to taste.  Some like a lot of cheese, while others want a little less cheese.  Put the pizza in the middle of the oven, fry at 250 degrees for about 10- 15 minutes.  The dough has a golden and fine color.

It’s not very complicated to make a basic, classic and traditional Norwegian homemade pizza, but it’s still very tasty 🍕.

Now at days when I’m using this recipe for making a pizza I also “spice” it up with some garlic and mushrooms,- or other tasty herbs or spices 😊. Maybe even use ham instead of mixed meat , and some pineapples too 😊.

It’s weekend and time for baking some homemade cinnamon spins 🥯

It is weekend and time for some homemade food baked with a traditional Norwegian recipe,- so what about some cinnamon spins this time? 🥯

They take a bit time to bake, but that’s just because they need to raised twice at room temperature before frying. Except from that, this homemade cinnamon spins are easy to bake and so easy to “tast”,- eat, and really worth waiting for 😊. And you can also have them in the freezer and take up a couple now and then when you want something baked, tasty and sweet, or have something sweet to your lunch, or to just serve your guests 😊.

The recipe for Norwegian homemade cinnamon spins: (ca 40- 50 pieces)

5 dl milk, 50 g yeast, 200 g melted butter, 1 teaspoon slowly, 3 tbsp sugar, 4 eggs, 2 teaspoons cardamom, 18 dl wheat flour (and some wheat flour for baking).

Have butter, cinnamon and sugar ready to sprinkle with dough after first raising.

Stir the yeast into lukewarm milk, add salt, sugar, eggs and cooled butter.  Mix cardamom into the flour and knead everything into a smooth dough.  Set the dough rise for about 45 minutes, take the towel over the dough.

After the dough is raised, real dough, divide it in half, and roll out a surface of about 50 * 30 cm. Spread soft butter over the surface, sprinkle with sugar and cinnamon.  Roll the dough together and divide into pieces.  About.  20-25 from each roll.  Let the dough rise for about 20 min.  covered with kitchen towel.  Brush the dough with eggs and place in the oven for frying.  Fry in the middle of the oven at 250 degrees for about 10- 12 minutes until the cinnamon spins are golden.

I’m going to “deliver” some to my son in the middle and his friends later today, and I hope they will be happy 😊.

Homemade “Pizza whirls/ spins” with a Norwegian recipe 🍕

It’s a bit busy days here at the moment. The boys are moving in, my oldest son and a friend of him. And a colleague of my needed to travel in a rush to Norway for private reasons. Something that means it’s suddenly becsme a bit more work takes and do for me. That’s fine, the days goes very fast then, at the same time it get a bit busy too 😊.

I also have my online shift 5 evenings during the week,- and are also a teacher as well one evening in the week. And I do think a new student also is going to start next week with some intensive classes. This student is going to move to Norway in May. As long as I know theres a “stop- point” I think I will manage to be this student’s teacher for the nexts weeks 📚. If it hasn’t I don’t think I had said yes to teach this new student. Because it’s a bit of “this and that” around me in my life at the moment,- special in the working- area 😊. But I’m very grateful for that- it was not very fun last year when I hardly knew how to pay my bills 😔.

Busy days takes energy and also needed to be “refill” with more energy during good food, so ther will be no “collapse” during the nexts weeks 😅. So I did filled up my freezer with homemade pizza whrils/spins today 🍕. To use as some easy, good and tasty “filling” snacks in between my normal daily meals 😊. For me it’s important to keep up my energy with food,- and when I use more energy, even it is during work, I also need to eat. It’s like with exercises. As more as I exercise as more food need my body. Just because it also use the energy the food gives me 😊.

The recipe for homemade Norwegian pizza whrils/ spins 🍕

1. 750 gr flour, 1/2 l milk, 50 gr.melted butter, 1 tbsp yeast, 1 tbsp salt, 3 tbsp sugar. 2. Pizza spices, garlic salt, paprika spices, basil (spices or fresh).  Grated cheese and a box of 500 grams of ham. This is for use after the dough has rised for 30 – 45.min.

1. Mix together the dry and the wet milk and butter.  Make sure that the temp. Of milk and butter is just over 37 degrees. Then leaf everything together.  Leave the dough to rise in a warm place for about 30-45 minutes and preferably with a towel over.

When the dough is finished, roll it like a flat rectangle.  2. Sprinkle with spices, add chopped ham and sprinkle with grated cheese.  Roll the rectangle joint to roll a long sausage and divide into spins.  Place the spins on a baking tray covered with baking paper.  Let the spins rise once again for about 30 minutes with a towel over them.

After raising, brush the spins with either whipped egg or milk.  It is important that the liquid is room-temperature.  Pizza spins are roasted at 225 degrees in the middle of the oven for about 25 minutes.

This take a bit time to make, but its worth the time 🍕. How many you get depends a bit how big or small you make the whrils/ spins 😊. At least I have some food snacks to fill up my stomach and my energy level in between my ordinary meals during the nexts busy weeks 😊🍕.

This pizza whrils are perfect to make and just have in the freezer too as a lunch bit or some easy food when you have guests 😊🍕.

What about some homemade Norwegian tomato soup for lunch? 🍅🥣

Even at busy days some food is necessary, and some homemade food is to prefer 😊. Homemade food don’t need to take a very long time to make, and it still tast good 😊. My homemade Norwegian tomato soup is easy to make, tasty and “feed up the stomach” too 😊. I have a very traditional recipe from Norway I’m using to make my tomato soup. But I need to admit that I “spice” up the soup with both ham pieces, some oregano, pepper, some chopped onions and other vegetables that I have in my fridge and that needs to be used, and chop them into pieces.  Then the soup becomes even more filling.

My traditional Norwegian recipe for homemade tomato soup 🍅🥣

2 tablespoons margarine, 1/2 cup wheat flour, 1 liter water, 1 broth cube, 1/2 teaspoon salt, 1 cup milk, 4 tablespoons tomato puree.

Boil broth in water, melt the butter in a pan.  Put in sifted flour, stir well so that it does not become lumps.  Spray on the broth of broth water.  Pour in salt, tomato paste and milk, bring to a boil while stirring.

Serve with boiled macaroni and boiled eggs in the soup, fresh baguettes. Enjoy 🥖🥣

This was not to bad to make for lunch one day? 😊 I’m going to have some traditional homemade Norwegian tomato soup for lunch today, – and maybe if there something left I also can have some with me for lunch at my job next week? 😊 The soup can be frozen, but without eggs and macaroni, or other accessories.  It thins out the soup when it is thawed, and egg should not be frozen either with or without the soup 🥣🍅🥖.

This is a basic recipe for a very traditional homemade Norwegian tomato soup,- and it’s tasty even without the different things I have in the soup to “spice” it up a bit. In general I do this to use different vegetables that’s needs to be used soon, and also because it’s a bit more “food” in the soup then too 😊.

Let’s make some spaghetti with a Norwegian tomato sauce recipe for the evening 🍝

I like Italian food, – pasta, pizza and spaghetti 🍝. I like pizza best, special with pineapple on 😅. It’s true,- pineapple on the pizza is so tasty for me 😊. But today it’s spaghetti “on the menu”, with homemade tomato sauce from my Norwegian recipe 🍅.

I need to eat some food with protein and carbohydrates now, and also with fat. You know when a skinny body as my is freezing in to the skeleton it burns a bit to much calories and use a bit much energy just to keep it warm,- so I do, unfortunately, losing a bit weight too when it’s cold, and when I’m freezing. And as some of you know,- I dont like to lose weight ⚖. So food, carbohydrates, protein, fat,- real homemade food as good as possible are on the menu 😊.

Well,- enough about that,- this evening is time for some spaghetti with homemade Norwegian tomatoe sauce 🍅 and some of the carbohydrates that are in the spaghetti that I need 😅. By the way, – Spaghetti is an Italian word and means small, thin strings or threads.  But it’s a little better to say I should eat “spaghetti” than to say I should eat “pasta in small thin strands” 😊.

The recipe for Norwegian Homemade tomato sauce to the spaghetti : 🍅

1 1/2 tablespoons margarine for frying.  250 gr.  mince.  1 chopped onion.  1 1/2 tablespoons wheat flour.  1 1/2 teaspoon salt.  1/4 tsp pepper.  2 tablespoons tomato puree.  1/2 l broth – ie boil 1 (el.2 if you want even more flavor) dice with broth in 1/2 l water.

And approx.  250 gr spaghetti, which is usually cooked as described on the package.

1. Cook spaghetti 2. Put minced meat, onion and the tomato puree in saute pan, fry with butter.  3. Mix flour, salt, pepper and sprinkle over.  Cook well.  Boil the broth mixture.  4. Mix with the meat dough sauce.  Cook up and serve the ham with spaghetti and preferably some salad and fresh baguettes.

Like I did write,- this is a Norwegian recipe, not Italian 😊,- but you can easily change the tomato puree with some French tomatoes 🍅. And also “topp” it a bit with oregano or basilicum, or even have some garlic into the sauce,- if you want. Its “room and space” for variation 😊.

This is not very difficult to make, and yes,- it taste, of course, great 🍝 😊.
